Mixed beans salad recipe

This mixed beans salad recipe is super easy and tasty. It's a healthy meal all on its own, and also a great side.

Ingredients

  1. Broad beans - 1 tin

  2. Butter beans - 1 tin

  3. Kidney beans - 1 tin

  4. Onion - 1 large

  5. Cucumber - 1 small or 3/4 large

  6. Lemon - 1

  7. Salt

  8. Pepper

Instructions

  1. Finely chop the onion

  2. Dice the cucumber

  3. Drain and rinse the beans in cold water

  4. In a large bowl, add the beans, the onions and the cucumber. Mix gently using large spoons or a salad fork and spoon

  5. Squeeze the lemon into the salad. To avoid getting lemon seeds in the salad, squeeze the juice into a glass or small bowl and then pour over the salad

  6. Sprinkle salt and pepper to your taste

  7. Mix through again

  8. Serve up and enjoy

Notes

  1. If you like feta cheese, crumble half a block onto the salad

  2. If broad beans and butter beans aren't easily available where you are, you could substitute with chickpeas, or black beans, or black-eyed beans too. Use your favourites

  3. If you're looking for some Indian flavours, add a large handful of chopped coriander and mix through, and a level teaspoon of chaat masala!
